Pecan Cookies

Pecan cookies are my all-time favorite! They're so buttery and crispy, and the pecans add the perfect amount of nutty flavor. I always make a big batch because they disappear so quickly.

One of my favorite things about pecan cookies is that they can be dressed up or down. For a more sophisticated cookie, try dipping them in chocolate or adding a drizzle of icing. Or keep things casual by leaving them plain. Either way, they're guaranteed to be delicious!

Ingredients for 30 cookies:

  • All-Purpose Flour - 200g

  • Egg - 1

  • Superfine Sugar - 160g

  • Pecan Nuts - 100g (coarsely chopped)

  • Chocolate Chips - 100g

  • Butter - 80g (melted and cooled)

Preparation:

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper

  2. Take your egg and beat it lightly

  3. Sift your flour and make a little vulcano in the center where you will add the beaten egg, the sugar, the pecans and the chocolate chips. Mix a little and then start to mix in the melted butter little by little (make sure the butter is not hot).

  4. Mix well until all the ingredients have combined.

  5. Now we can start making our cookies! Take a little bit of the dough and shape it into a small ball, then place it onto the parchment paper and flatten it a little bit (not completely). Do this with all of the dough.

  6. Once you are done bake for 10 minutes (if you made really big balls you might have to bake for a couple more minutes so check on your cookies after the 10 minute mark).

  7. Once ready remove them from the oven and leave to cool before serving.
