Mexican Week starts with an Enrique Oliviera inspired Herb Guacamole made without tomatoes and instead using herbs and spices to give it an exceptional taste. In our opinion this herb guacamole is fluffier and lighter than many other versions which ask to add garlic, tomatoes and sometimes paprika.

Ingredients for 2:

  • Avocados - 2 (room temperature)

  • Red Onion - 1 small

  • Key Lime - 1 (for juice)

  • Cilantro - some leaves

  • Basil - some leaves

  • Salt & Pepper

Extras:

  • Mint - some leaves

  • Serrano Chile - if you want to spice it up

How to:

  1. In a bowl mash the avocado with a fork (do not use a mixer)

  2. Once the avocado is mashed add in all the other chopped up ingredients and mix together.

  3. Add salt & pepper and serve :)

  4. You can keep avocado in the fridge for up to 2/3 days
