Penne with Parmesan Sauce and Asparagus

We all add Parmesan (or vegan parmesan) to our pasta but have you ever made Parmesan Sauce? We did and it was absolutely delicious! Parmesan already has quite a strong taste and we didn’t want to make this pasta too heavy or fill it with too many different tastes so we decided to pair the Parmesan Sauce with some crunchy grilled Asparagus - not only healthy but extra delicious.

This is a delicious pasta if you don’t have many ingredients at home as you can also have it simply with the parmesan sauce without adding the asparagus or you can change asparagus with peas, broccoli or cauliflower!

Prep Time: 10 Minutes

Cook Time: 20 Minutes

Ingredients for 2 people:

  • Penne Rigate - 250 g (1.06 cups)

  • Parmesan - 40/50 g (0.5 cups)

  • Asparagus - 10/12 asparagus

  • Milk - a drop

  • Salt & Pepper

  • Olive Oil

Preparation:

  1. We start the preparation by cleaning the asparagus and cutting off the ends.

  2. We then place them in a bowl, add some olive oil and salt and mix with our hands.

  3. Heat a grill pan, make sure it’s hot before adding the asparagus and cook for around 10 minutes or until the asparagus is nice and cooked (should be a little brown) - put the asparagus on the side.

  4. Now we prepare the parmesan sauce. Grate your parmesan and place it in a bowl, add some pepper.

  5. In the meantime start cooking your pasta (cook it for 1 minute less than it says on the package) and at around half time add some of the cooking water to your parmesan bowl (roughly half a cup).

  6. Mix the parmesan and water very well and add a drop of cold milk (you can’t really go wrong here if you put too much milk) - keep mixing and add the asparagus to your mixture. Don’t worry if the mixture looks a little clumpy.

  7. Once the pasta is cooked drain it and put it back in the pan, quickly add the parmesan sauce and let it simmer for 2/3 minutes until the sauce is nice and melted.

  8. Remove from the heat and serve.

  9. Enjoy!
