Roasted Beets are absolutely delicious as the process of roasting them really brings out their sweetness and caramelised taste. Because of this sweetness it is best to pair Roasted Beets with either meats like turkey, beef brisket or salmon but our all time favourite are Roasted Beets with Goats Cheese and Roasted Beets with Green Beans.

Roasted Beets are also a perfect Thanksgiving side dish as they really complement the Turkey. They are also perfect for those doing a vegetarian or vegan Thanksgiving. We decided to also roast some garlic with the beets to give them an extra kick.

Prep Time: 15 Minutes

Cook Time: 40 Minutes

Ingredients for 6:

  • Beets - 11

  • Thyme - a bunch

  • Sherry Vinegar - 2 Tbs

  • Orange - 1

  • Olive Oil

  • Salt & Pepper

Preparation:

  1. We start this preparation by pre-heating the oven to 200°C

  2. Clean the beats well removing the top, the roots and peeling them with a potato peeler.

  3. Cut the beats into chunks (not too big not too small).

  4. Place the beets you just cut on a baking sheet, add some olive oil (around 3 Tbs), thyme, salt and pepper.

  5. Roast for 35 minutes turning them once in a while. Before you remove them from the oven make sure you poke them with a fork to see if they are tender and well cooked. Depending on the oven this could take 5 or 10 minutes longer.

  6. Remove them from the oven once they are done put them in a bowl and add the sherry vinegar and the juice from one orange. Sprinkle salt & pepper.
