Spicy Lentil and Chickpea Salad

This spicy lentil and chickpea salad is my absolute obsession. It’s not only super healthy (beluga lentils are full of fibre, chickpeas full of proteins and green beans are a great vitamin source), but also so easy to make, absolutely delicious and vegan. I also really like my salads to have an extra kick and adding the Sriracha sauce to this salad really brings out some amazing flavours.

I usually make the salad with a yogurt, lime and Sriracha dressing but you can also skip the yogurt and make a simple lime and Sriracha dressing for a full vegan salad. Since this is a quick recipe I use pre cooked chickpeas and beluga lentils I buy at coop from Karma as I find these to be the tastiest ones.

Ingredients for 2:

  • Beluga Lentils - 200 g

  • Chickpeas - 100 g

  • Green Beans - 200 g

  • Cherry Tomatoes - 200 g

  • Red Onion - 1

  • Lime - 1

  • Sriracha Sauce

  • Cilantro

  • Mint

  • Salt & Pepper to taste

Optional if you want to make the Yogurt dressing:

  • Organic Natural Greek Yogurt - 150 g

Preparation:

  1. Start by bringing some water to boil. Clean your green beans and cut off the tips. Boil them for 5 minutes then drain and put aside.

  2. Meanwhile in a wok style pan add some olive oil and start cooking your red onion. Let it cook at medium heat for around 3 minutes before adding the cherry tomatoes (I usually cut them in half).

  3. Let simmer for around 3 minutes before adding the beluga lentils. (rinse the beluga lentils and chickpeas before you add them to cook, you will see they are quite foamy so make sure you rinse them until no more foam comes out).

  4. Let everything cook for another 2 minutes before adding the chickpeas. Cook everything for another 2 minutes before adding the juice from half a lime and around 1 Tbs of Sriracha sauce (this really depends on how spicy you want it to be so regulate it yourself by tasting).

  5. Let cook for another 5 minutes at medium/low heat.

  6. Meanwhile prepare a pan to grill your green beans. Add some olive oil and start cooking them - drizzle some salt. We want the green beans to be nice and crunchy so it’s fine if they have some burnt spots.

  7. When your green beans are done you can start plating. Put your lentil and chickpea salad in a bowl, add the green beans on top, add some cilantro and mint and voilà your salad is done.

  8. For the dressing either add some more lime and Sriracha or make a Yogurt based sauce by mixing Organic Natural Greek Yogurt with half a lime and a Tbs of Sriracha.
