Tortilla de Patatas

What would Spanish Week be without the famous Tortilla de Patatas. This is probably one of the most famous Spanish dishes in and outside of Spain and rightly so. The Tortilla de Patatas is a perfect starter or main course and it can even be a snack the next day cold from the fridge.

For the Tortilla de Patatas you will only need a few humble ingredients: potatoes, eggs, onions and olive oil - and it is precicely because it is such a simple dish that it is very hard to trace it’s exact origins. All we know is that it was a poor people’s food that has turned into a traditional dish all over Spain.

Cooking Time: 30 Min

Ingredients for 2/3:

  • Potatoes - 600 gr

  • Onion - 1

  • Eggs - 5 Medium

  • Olive Oil (to fry)

  • Salt

How to:

  1. Peel the potatoes and cut in small pieces. Do the same with the onion.

  2. In a pan fry the potatoes and the onions at medium-high around 15/20 min. Cover a plate with kitchen paper. Remove the potatoes from the oil and put them on the plate to remove the excess of oil.  We should remove them just before they become golden and crunchy. 

  3. Keep the oil in a separate container and clean the pan with kitchen paper. 

  4. In a bowl beat the eggs and add the potatoes and onions. 

  5. In the same pan you fried the potatoes pour a drizzle of the oil you kept on the side. And pour the mix of eggs, potatoes and onions. Cook at medium heat. This step is the most important one, if the pan is too hot you risk burning the tortilla and if the heat is too low the center will be completely under cooked (we want the center to be a bit raw not fully raw).

  6. Separate the edges and get ready to turn the “tortilla” with the help of a plate. Put a plate upside down on top of the pan. Make pressure to hold both pan and plate together and turn in a quick and controlled movement. Put back the tortilla in the pan to cook the other side.

  7. When both sides are cooked, place the plate you want to serve the tortilla upside down on top of the pan and repeat the same movement you did previously. 

  8. Your tortilla is ready. Enjoy!
