Cauliflower Steaks with Pesto and Nussmesan

Cauliflower steaks are my newest addiction - they are filling, healthy, absolutely delicious and so versatile. This time I decided to make my cauliflower steaks with home made pesto and some Paprika Nussmesan from Chopfnuss. For those who still don’t know Chopfnuss they are a Swiss start up that make delicious vegan alternatives to parmesan which we love! This time I chose the Paprika flavoured one as I wanted to give my cauliflower steak an extra kick.

When making the pesto you can choose to either add pine nuts or any other type of nut (you can also leave them out completely and add some Nussmesan instead).

Ingredients:

  • Cauliflower - 1

  • Paprika Nussmesan from Chopfnuss - 4/6 teaspoons

  • Basil - 100g

  • Pine Nuts - 10g

  • Chili flakes - as you wish

  • Olive oil

Preparation:

  1. Preheat your oven to 200°C. Line a large rimmed baking sheet with foil or parchment paper and spray with olive oil.

  2. Wash the cauliflower head, then remove the outer leaves and cut off the core at the very bottom.

  3. Cut each head into 2cm thick slices. The outer slices will fall apart - you can just bake them along with the steaks. You should get three steaks from each head of cauliflower.

  4. Arrange the "steaks" in a single layer on the baking sheet, drizzle with olive oil.

  5. In a blender, puree the basil with 2 tablespoons of olive oil and the pine nuts - the pesto is ready!

  6. Spread the homemade pesto on the cauliflower steaks

  7. Add 2 tablespoons of Chopfnuss Paprika Nussmesan to each steak

  8. Add some chilli flakes

  9. Bake at 200°C for 30 minutes

  10. The steaks are ready! eat alone or with some hummus
