Arugula, Dates, Pistachio and Crumbled Feta Salad

I fell in love with this salad after trying it for the first time. I thought that putting dates and pistachios together in a salad would sweeten it too much but the mix with the arugula, feta and pomegranate seeds is simply perfect.

A salad that literally takes 5/10 minutes to make and you can have it either as a light lunch/dinner or you can serve it as a starter or bring it to a picnic (your guests will be impressed). It’s really one of those dishes that stands out because of its flavours but requires almost 0 time.

Ingredients for 2 people:

  • Arugula - 200 gr (10 cups)

  • Feta - 60 gr (2 ounces)

  • Dates - 6

  • Pistachios - around 20/25

  • Pomegranate Seeds - as many as you like

  • Olive Oil

  • Salt

Preparation:

  1. Wash your arugula very well and dry it nicely

  2. Peel your pistachios if you bought unpeeled pistachios and grind them

  3. Take your dates and chop them into small pieces

  4. Start plating by putting the arugula in a bowl, add the dates and the ground pistachios on top

  5. Now take your feta, crumble it with a knife and add it as well

  6. Sprinkle the pomegranate seeds on top

  7. Add some olive oil and if you wish some salt (not too much as feta is already quite salty)

  8. Enjoy
