Burrata and Basil Tagliolini with Fried Aubergines
As you know, I’m a pasta lover and could eat pasta every day! Today I felt like making something a little bit different as I craved something crunchy and something creamy at the same time so I decided to make this Burrata and Basil Tagliolini with Fried Aubergine sticks. Delicate and delicious.
Orange Olive Oil Cake
I am usually not a big fan of orange cakes but this orange olive oil cake really changed my mind. The batter is absolutely delicious and yes - it does have the taste of olive oil which I loved! The top part is crunchy yet soft and gives the cake an extra layer of taste. I have to admit I failed at my first 2 attempts when making this cake: once because I cut the orange slices too thinly and they broke during caramelisation while the second time I added too much orange juice and the cake was not firm enough.
Muhammara (Red Pepper Dip)
Hummus has become one of our favorite dips and we have all had Baba Ganoush but have you tried Muhammara? Muhammara is a hot red pepper dip that originated from Aleppo, Syria and apart from being vegan and delicious it’s also super easy to make! Muhammara has got it all, it’s spicy yet sweet, thick but creamy and fits perfectly on a mezze platter with some Pita Bread, Hummus, Babaganoush or with meat/ fish. Something delicious you can also make are sandwiches with Muhammara and grilled vegetables.
One Pot Mushroom, Spinach and Rosemary Pasta
Sometimes it just feels like there is not enough time to cook, especially over lunch. This is where One Pot pasta comes in: it’s super easy to make, you literally put all the ingredients in one pot and wait and - it’s delicious! Last time I posted about the Tomato & Spinach One Pot which is one of my favourites but this time I wanted to make something a bit different and decided to use mushrooms and rosemary instead of the tomatoes (and keep the spinach as I love spinach and it’s super healthy).
Zucchini and Potato Healthy Gratin
Potatoes are one of my favorite ingredients because they are so varied and you can cook them in so many ways. Today I decided to make a Zucchini and Potato gratin as I wanted something healthy but a bit crunchy - a dish that makes you feel cozy and gives you the feeling that you are treating yourself to something nice while being healthy and nutritious. I made the gratin with parmesan, breadcrumbs and herbs using no cream or milk as this is what makes the dish heavy.
Spaghetti with Aubergine, Tomatoes and Vegan Ricotta
Today I decided to make something a little more fun and serve the spaghetti inside the aubergine, with this recipe I recommend around 110g pasta per person as you will also be eating the aubergine and will get full faster. I tried the New Roots Vegan Ricotta for the first time to make this dish 100% vegan and was blown away - it tasted amazing and the texture was perfect!
Zucchini Fritters with Skyr Tzatziki
Today I woke up craving Tzatziki maybe because I was missing summer or maybe because I wanted something fresh and light. I had all the ingredients to make Tzatziki in the fridge (Isey Skyr, lemon, cucumber) but I wasn’t sure what to pair it with. Then I found 2 zucchinis and right away thought about delicious Zucchini Fritters! 30 Minutes later I was sitting in front of this flavourful plate ready to dive in
Roasted Leeks with Almonds
These Roasted Leeks with Almonds are a very special dish - leeks are not the easiest ingredient and many people find them to be dull but this recipe really makes them the star of the show. By roasting the leeks you get this amazing smoky taste and by leaving them in olive oil salt and pepper for at least 4 hours the leeks really soften up and taste amazing. This is a very simple dish the only “issue” is the resting time so we really recommend you roast the leeks the day before you want to serve them, put them in the fridge and you’ll be ready for the day after with no stress at all.
Baked Falafel
Who doesn’t love Falafel? Apart from being delicious they are also a good source of fiber and protein and get you full quite fast so you usually don’t overeat. Falafel is made mainly of chickpeas which are full of vitamins, minerals and are known to aid in digestion and weight control. The only problem is that falafel is usually fried which adds calories and fat to this actually very healthy meal.
Catalan-Style Spinach
Yes, spinach is super healthy and is filled with vitamin K, vitamin A, vitamin C, folate, magnesium, iron etc etc but let’s be honest, spinach on it’s own can be quite dull if you don’t add cream or cheese (which makes it a little less healthy again). I fell in love with Catalan-Style Spinach the first time I tried it because of the great mix between the salty spinach and pine nuts and the sweet dry raisins - this is really a dish for everyone and I can imagine kids everywhere loving this dish as well.
Baba Ganoush (Aubergine Dip)
Baba Ganoush is a delicious dip made with grilled Aubergines. Similar to Hummus, Baba Ganoush is eaten with pita bread or raw vegetables such as carrots, fennel, peppers or cucumber. Traditionally Baba Ganoush is made by grilling the eggplants on an open flame which gives the dish an additional layer of smoky flavour but for this recipe you will only need your oven.

Sweet Potatoes are one of my favourite foods not only because they are delicious but also because they are super healthy and versatile. This time I decided to make a sweet potato soup - something I had never made before and I was really happy as it turned out amazing!

Fatayer’s are usually made with a meat filling but the Spinach filling is also quite popular in Lebanon and other Middle Eastern’s countries. The Fatayer’s are quite easy to make you don’t even have to pre-cook the filling.

Glazed Sesame Salmon is one of my go to recipes when I want something healthy and super easy to make - it’s also a perfect dish for Sunday evenings after a long weekend of eating and drinking or an after work delicacy. The first time I made Glazed Sesame Salmon I was surprised at how easy it was and how few ingredients I needed to make a truly restaurant worthy dish.
Topinambur (Jerusalem Artichoke) Soup
Topinambur or Jerusalem Artichoke is a potato looking root vegetable unfortunately not many people know about. This year I decided it was time to start cooking more with Topinambur and I’m already addicted to this soup I made using both Topinambur (Jerusalem Artichoke) and Cauliflower. I left the skin on the Topinambur and washed them carefully - the skin is edible, has a lot of nutritious properties and gives the soup and extra delicious taste. If you don’t want to keep the skin you can definitely peel the Topinambur like you would a potato.

This week we got our first Christmas present from Braun -the Multiquick 9 Hand Mixer and we couldn’t wait to try it out. We decided to make delicious home made Almond Milk as a first recipe. This 15 minute Lentil Salad with Baked Feta is one of my all time favorite lentil dishes as it is super easy to make, a little bit spicy if you add the chilly, delicious with the lime juice and the baked warm feta really brings everything together.
Honey Glazed Roasted Vegetables
Honey Glazed vegetables are super easy to make and really delicious - you can have them with meat or cuscus, rice or other grains. I especially like this recipe as I usually don’t use celeriac and parsnip as I don’t like them that much but roasted with the honey glaze they are really good and absolutely healthy.
Roasted Beets
Roasted Beets are absolutely delicious as the process of roasting them really brings out their sweetness and caramelised taste. Because of this sweetness it is best to pair Roasted Beets with either meats like turkey, beef brisket or salmon but our all time favourite are Roasted Beets with Goats Cheese and Roasted Beets with Green Beans.
